International. Researchers in New Zealand have developed a technology based on the observation of shark skin, which could be applied in professional cleaning environments, especially in the nutrition sector.

It's about metal surfaces created to hinder bacteria adhesion, decreasing the need for chemical disinfection and simplifying hygiene maintenance.

"When we hear about technological advances, we usually imagine artificial intelligence or electric vehicles." However, there are also discreet and effective advances: a group of researchers developed anti-microbial kitchen surfaces, a vital advance for the food industry and for those who want greater hygiene in their homes," La Chispa reported.

Technology replicated from natural structures
The development was carried out by the Hopkirk Research Institute and the Center for Food Safety Science, using a laser texturing process that reproduces the pattern of the shark's skin.
These surfaces prevent microbial build-up, without relying on the heavy use of chemical agents.

"This development not only reduces the need for harsh chemicals, but also improves food safety in environments where contact with raw food is frequent."

The results, published in the Journal of Laser Applications, indicate a reduction in the presence of bacteria, even before applying conventional disinfectants.

"Instead of cleaning, contamination is prevented from the very design of the material," the study authors said.

Implications for the cleaning sector
These surfaces represent an option that acts preventively. Some of its relevant features for cleaning and maintenance services are:

Less frequent intensive cleaning

Decrease in chemical consumption

Reduced wear and tear on equipment

Possibility of implementation in industrial kitchens, hospitals and sectors with sanitary requirements

"In addition, they created anti-microbial kitchen surfaces with the aim of improving both food safety and sustainability, issues that are currently high on technology agendas."
